The grapes come from vineyards over 75 years old. It is vinified with an open spout, and the must is placed in small decanters where it remains between 24 to 36 hours to decant. At the end of the process, the must is transferred to stainless steel tanks where it fermentes. The base wine is sparkling and ages in the cellar for 36 months before “degorgement”. A sparkling wine of traditional method, fermented in bottle, with “remuage” made by hand in wooden pupitres. Being a natural crude, it has no added sugar in the shipping liquor. Pale and yellow appearance, medium intensity aroma, orange blossom, lime, light honeycomb, toasted bread, raisin, biscuit, hazelnut, salt, chalk and wet stone. In the mouth it is dry, high acidity, medium alcohol, medium body, medium intensity, fine bubble, lime, honeycomb, saline and long finish. On the palate there is a very fine bubble, salinity and light molasses. The acidity and the revealed structure make this reference an excellent companion at the table. Contains sulfites.
