Dom Pérignon P2 Vintage 2000 is drunk beautifully, floating from the glass with complex and smoothly reducing aromas of iodine, lemon oil, mandarin and oyster shell that began to develop appreciable tertiary nuances. In the mouth, it is medium to full bodied, deep and expansive, with a wide fit, incisive acids, an elegant mousse and a long, precise, mouth-watering finish. The year 2000 kicked off an early Dom Pérignon, and this newly released delivery really benefited from the additional time additions, gaining noticeably more complexity – at the same time it retained more energy – than the original waste. Given its maturation profile, I would plan to drink bottles in the next decade. Contains sulfites.
