Sake or nihonshu is a Japanese alcoholic beverage containing 14 to 17% alcohol by volume, made from a fermentation of water, yeast, and steamed rice, with approximately 20% initially inoculated with a fungus to allow better fermentation. Produced by the Banjo Jozo brewery, the Artisan 55 is a junmai ginjo (meaning no added alcohol and rice grains polished to 40%). Made from 100% organic rice and fermented with natural yeast, it reveals rich fruity aromas, as well as woody notes. This high-quality sake, which should be drunk like a precious wine, was crafted in a traditional way by the Banjo Jozo kuramoto (master brewer) assisted by his toji (cellar master).
