Sake or nihonshu is a japanese alcoholic beverage containing 14 to 17% of the volume, made from a brewing of water, yeast and steamed rice with approximately 20% was at first inoculated with a fungus in order to allow a better fermentation. Produced by the Banjo Jozo brewery, the Artisan 55 is a junmai ginjo (which means without the addition of alcohol and rice grains polished to 40%). Made from 100% organic rice and brewed using natural yeast, it reveals rich fruity aromas but also woody notes. This sake of high quality, which should be drunk like a precious wine, was designed in the traditional way by the Banjo Jozo kuramoto (brewmaster) assisted by his toji (cellar master).
