After maceration, the wine is bled and blended with the press wine, followed by aging that varies between 10 and 15 years in used oak barrels. Moscatel Alambre 20 Anos
The 20 year old wire is made from the Moscatel grape variety, which is a type of grape that excels in its fruity character, melted with the aroma of tropical fruit, differentiating the muscat wines from any other type of wine. This wine is a batch of 19 harvests in which the youngest crop is at least 20 years old and the oldest one is about 80 years old, resulting in a complex, elegant, aromatic wine with a long end of trial. After receiving the grapes in the cellar, the probable grade of the grapes is analyzed so that the addition of brandy is carried out at the optimum time. The Favaios 10 Anos is a lot wine in which only the best Moscatel harvests are used for its constitution. In the years when nature allows conditions for the caste Moscatel express itself in all its splendor are made some fermentations with a careful selection of grapes. Moscatel Favaios Siza Vieira 1980
The Favaios 1980 is the type of wine that vinifies only in the years in which the grapes have demonstrated to have an exceptional quality. After careful selection of the best Favaios grapes they were macerated and fermented as they were traditionally in the region. The alcoholic fermentation is very short, and soon after the ascent of the blanket is bleeding of most of the wort and application of brandy. A small part of the wort, however, continues to ferment and macerate with the films for a few more days and only later is the fermentation of this very aromatic rich must. The first and second mustards are then blended and stored in very old wood shavings and then age slowly improving their bouquet over decades. It consists of an intense selection of bunches followed by a pre-fermentative maceration for 5 days, after which the fermentation is allowed to start very slowly homogeneously throughout the vat reaching 3/4 of the fermentation in 3 days, benefiting this wine with the best wine spirits available in the market selected by the technicians of the company, followed by a post-fermentative maceration of 5 long months. The final stage is made in barrels of 225 liters of French Oak (used 2 to 3 Wines), where it is to concentrate. For this wine were selected the best barrels.
