Teeling Sommelier Selection includes variants of Small Batch Irish Whiskey in which high quality wine barrels are used for secondary aging instead of rum. After barrels of French and Italian wines, the 5th release will see for the first time maturation in barrels of red wine from the Portuguese Douro Valley, whose wine was pressed from the harvest of vines over 25 years old. These casks enrich the light, fruity-floral whiskey with hints of dark fruit and spice. Aromas of ripe plums and currants accompanied by dates and spicy notes. Intense palate, but well balanced with black pepper and tannins alongside sour cherry and rich dark fruit flavors. Medium and fruity-spicy finish with dry tannins and warm spices.

The grapes are selected and harvested by hand. The must undergoes maceration for 12 to 14 days, followed by malolactic fermentation. The wine is then aged in French oak barrels for a period of 6 to 10 months and further refined in the bottle. Bright ruby red color, intense and persistent bouquet with notes of wild fruits that combine well with the aromas released by the wood of the barrels. Nikka Yoichi Single Malt
Yoichi Single Malt shows the characteristics of Nikka's first distillery built in 1934. Founder Masataka Taketsuru chose Yoichi in Hokkaido because of similar environmental conditions to Scotland, where he learned how to make whiskey. It is described as strong and bold. Pleasant notes of mortar and smoke originating from the traditional charcoal distillation, as well as a salty suggestion that the sea breeze provides during the aging process.

Very aromatic in the modern style of seasoned sherry barrels. Red berries, roasted banana, notes of sawdust and vanilla. Some candied orange peels and raisins and light leather notes. In the mouth, a good dose of sherry, raisins and oranges. Many toasted wood spices too: pepper, ginger, nutmeg, slightly oppressive, perhaps including a slightly bitter touch. A deliciously creamy single-grain Scotch whiskey, matured for 20 years before bottling. Two decades have given this one plenty of time for its flavor profile to develop all those flavorful grainy notes, so expect notes of caramel, honey and cooked fruit. Aromas of orange peel, caramelized nuts, slightly chocolatey, dry oak heat. Palate with notes of icing sugar, anise, honeycomb, baked apple. Aftertaste with a soft touch of oak and lasting caramel.
Hatozaki Blended
It has a delicate roundness with a rich backbone of malt whiskey, offering cereal notes and a smooth sweetness. Aged for up to 12 years and created through a two-stage blending process, it is never colored or filtered without refrigeration. Unique, delicate and floral. It offers a balanced mouthfeel, with an aromatic palate and floral notes. The style is elegant and light, bringing out significant depth from the malted barley.

Very, very dark. Sweet, spicy, licorice nose. Very broad start to taste and then dried fruits on the finish. Lots of firm tannins yet. Still relatively embryonic. Heat in the finish. Lovely spice in the finish. It's not Warre's most stereotypical style of wine. Powerful finish. Almost muscled with some fruit and wild flower flavors on the nose.

Quinta do Vallado Adelaide Vintage 2014 Ruby
60% mixed old vines (from a vine under control by Quinta do Vallado in the Torto River Valley) and 40% Touriga Nacional from Quinta do Vallado. The grapes (50% of them with stems) were fermented during 4 days in presses with footfoot periodic. The wine aged for 20 months in stainless steel tanks. Deep and strong nose, with intense aromas of dark fruits. full bodied with ripe and smooth tannins. Excellent structure and complexity, with very long finish. Contains sulfites.
Terras de Lava Red
The grape must was fermented with the skin to extract more color and tannin. Temperatures were controlled so that the fruity aroma was preserved. A small percentage of oak was used to complement and give structure. Light ruby color. Aroma of red fruits, wild berries involved with notes of volcanic sulfur and slight vanilla. In the mouth it is very elegant and smooth with a medium body. It ends with a pleasant and persistent salty taste. Contains sulfites.

After an aging period of 19 months in barrels, we carry out a light fining and then bottling. The wine rested for 1 year before being marketed. Intense ruby color. Very appealing aroma, intense, fine and fragrant. Ripe red and black fruits stand out as well as floral notes supported by spicy nuances. Very soft attack, polished and elegant tannins. Manual harvest for 20kg boxes. The grapes were carefully selected on a sorting table and then destemmed. Fermentation carried out in a mill with indigenous yeasts. Finished with an aging of 24 months in barrels, 50% in new barrels, 50% in used French oak barrels (225L). Intense aroma of wild fruits and black fruit, balsamic notes and spice. In the mouth it is fruity, firm tannins and very well integrated. It presents a good acidity and a long and tasty finish. Contains sulfites.

Followed by selection on a mat of choice, 30% with destemmed and 70% whole bunch were introduced into the vat, allowing the extraction of color compounds and aromas more smoothly during 3 days of alcoholic fermentation totally in stainless steel vats, being bled from each vat. a small volume of must completing both alcoholic and malolactic fermentation in used French oak barrels. Wine with an open ruby color, primary aromas of rockrose involved by notes of forest fruits in a set of fine cut, light fresh spice. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Followed by selection on a mat of choice, 30% were introduced into the vat with crushing and 70% in whole bunches, which allowed the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation totally in stainless steel vats, having completed the malolactic fermentation in stainless steel. It was then aged for 75% in used 4-year-old barrels of 400L and 225L of French oak, where it remained for 12 months, with the remaining part of the batch aged in stainless steel vats. of wild fruits, in a typical Douro region with a fine cut, slightly spicy and fresh. Mechanical harvest at night. De-stem and light crushing, followed by thermal shock to 16ºC through a mass exchanger. Cold pre-fermentation maceration for 48h. Fermentation in conical stainless steel vats at controlled temperature. Finished with a partial stage of the blend in used 300L and 500L French oak barrels for nine months. Intense and concentrated ruby color. Aroma dominated by fresh wild fruit, perfectly integrated with the toasted and spicy notes from aging in barrels.
