Grapes are harvested by hand into small boxes before being refrigerated and then pressed into a pneumatic press without destemming. Cold decanting, followed by fermentation in temperature-controlled French oak barrels and regular bottling up to one month before bottling. Aging 11 months in used French oak barrels, with regular bâtonnage and 6 months in bottle. It is a wine of extraordinary rarity, with incredible precision and definition, an expectation of longevity of 25 or more years, and immediately established itself as a cult white wine. Contains Sulfites.
