The Role of a Sommelier: What is it? What do they do?
What it means to be a Sommelier
Much more than a wine expert, the sommelier is the professional responsible for transforming a choice into an experience. With in-depth technical knowledge of regions, grape varieties, production methods, food pairings, and wine service, the sommelier plays an essential role in connecting the producer, the wine, and the consumer.
Traditionally associated with fine dining, the role of the sommelier profession has evolved over the years and has also gained relevance in specialized wine shops, hotels, wine events, and premium spaces dedicated to wine. Today, it is an indispensable figure for anyone seeking personalized guidance, the discovery of new producers, and more complete wine experiences.
In an increasingly vast and diverse market, the sommelier helps to interpret wine in an accessible yet rigorous manner, valuing not only the product but also its history, origin, and identity.
What a Sommelier Does
A sommelier's job goes far beyond recommending a wine. It is a profession that combines technical knowledge, sensory sensitivity, and communication skills.
Among the main functions are:
Wine Selection and Curation
The sommelier often participates in choosing the wines available in a wine shop, on a menu, or in a premium selection. They evaluate regions, producers, aromatic profiles, positioning, and the gastronomic potential of each reference.
At Cave Lusa, this work is particularly important due to the diversity of available references. The sommelier also participates in selecting new references and making purchasing decisions for the wine shop, following trends, discovering producers, and assisting in building a diverse offering tailored to different consumer profiles, occasions, and levels of knowledge.
Personalized Advice
One of the functions most valued by customers is the ability to recommend the right wine for every moment. Whether for a special dinner, a gift, or a specific food pairing, the sommelier helps the consumer find options suitable for their taste and budget.
Expert advice makes the world of wine more accessible, especially for those looking to explore new regions or wine styles with greater confidence.
Food Pairing
Understanding how wines interact with different dishes is a fundamental skill. The sommelier understands structures, acidity levels, tannins, sweetness, and aromatic intensity, enabling them to create balanced pairings that enhance both the wine and the cuisine.
Service and Preservation
Correct temperatures, decanting, the type of glass, and proper storage directly influence the tasting experience. The sommelier ensures that each wine is served in the best conditions, respecting the characteristics of each reference.
Wine Culture Education and Promotion
In addition to direct customer interaction, the sommelier also plays an educational role. Guided tastings, events, workshops, and informative content help bring consumers closer to the world of wine in a more conscious and informed way.
Sommelier and Oenologist
Although both professions are linked to the world of wine, the sommelier and the oenologist perform quite distinct roles.
The oenologist is the professional responsible for wine production. They work directly in the vineyard and the winery, overseeing processes such as harvesting, fermentation, aging, and defining the wine's profile. It is a technical role linked to creation. The sommelier, on the other hand, primarily works with the final consumer experience. Their focus is on selecting, presenting, serving, and recommending wines.
Simply put:
- The oenologist creates the wine;
- The sommelier interprets it and presents it to the consumer.
The two professions complement each other and, together, contribute to enhancing the wine from its origin to the moment of tasting.
Interview with Rui Madeira
Rui, being a sommelier at Cave Lusa means…
Working as a sommelier in a prestigious wine shop like Cave Lusa means taking on a role of great responsibility in promoting Portuguese and international wine culture. Being in a place with references from north to south of Portugal, as well as a wide selection of international wines, the job goes beyond simple sales; it involves curation, personalized advice, consumer education, and the creation of distinctive wine experiences.
The main challenge lies precisely in countering a natural consumption trend that is heavily focused on wines from the Dão Demarcated Region. While it is a region of great tradition and quality, it is normal for there to be an emotional and cultural connection to local wines; however, the sommelier's role also involves broadening horizons and sparking curiosity for other Portuguese regions, as well as for international references.
What made you fall in love with the world of wine?
A bottle can convey the identity of a region, the work of a producer, the influence of the climate, the soil, and even the culture of a people. Wine is never just a product; it is emotion, memory, and sharing.
Throughout my journey, I also discovered that wine has a unique ability to bring people together. The experience of advising a client, finding the right wine for a special moment, or seeing someone surprised when tasting a new reference is extremely gratifying. This human connection has become one of my greatest motivations in the profession.
The most significant moment in your career was…
I was fortunate to work on diverse and high-quality projects within the hospitality sector, experiences that contributed significantly to my personal and professional growth. I consider that the best moments of my career arose precisely from these opportunities for learning and sharing.
Having daily contact with demanding professionals, teams focused on detail, and environments where rigor is valued has allowed me to develop a more complete vision of service, wine, and hospitality.
More than titles or recognition, what I value most are the people with whom I had the opportunity to work and everything I absorbed along the way. Each project brought new challenges, different ways of thinking about wine and hospitality, and helped me consolidate a professional identity based on respect, curiosity, and the constant desire to evolve.
The detail that makes all the difference in a wine experience?
As a sommelier, I believe that the detail that makes all the difference in a wine experience is the ability to create a connection between the wine, the moment, and the person experiencing it.
The best wine is not always the most expensive or the rarest; often, it is the one served in the right context, with the right explanation, and with genuine attention to the customer.
Small details have a huge impact: the correct serving temperature, the choice of the appropriate glass, the timing of the presentation, the way the story of the producer or region is communicated, and, above all, the ability to understand the profile and expectations of those at the table or in the wine shop. This is where the sommelier's work ceases to be merely technical and becomes truly human.
On Sommelier Day, you toast to…
Above all, I toast to the customers! To those who trust the suggestions, who allow themselves to discover new wines, and who make every service a human and memorable experience.
Ultimately, on Sommelier Day, we toast to wine culture, to sharing, and to the privilege of transforming simple moments into special experiences.
