Quinta do Mondego
Manual harvest at optimum maturation point. Crushing and mild destemming. Fermentation in stainless steel vats for 8 days at 25ºC. Malolactic fermentation and aging in new French oak barrels for 18 months. Slight filtration before bottling. Deep violaceous color, aromatic very intense and exuberant, with floral notes, violet and spices, all this well married with notes of chocolate and vanilla of the wood. Soft attack, elegant and delicate. The tannins feel only at the end, very discreet and well tamed. Final is elegant and persistent.
