The Favaios 1980 is the type of wine that vinifies only in the years in which the grapes have demonstrated to have an exceptional quality. After careful selection of the best Favaios grapes they were macerated and fermented as they were traditionally in the region. The alcoholic fermentation is very short, and soon after the ascent of the blanket is bleeding of most of the wort and application of brandy. A small part of the wort, however, continues to ferment and macerate with the films for a few more days and only later is the fermentation of this very aromatic rich must. The first and second mustards are then blended and stored in very old wood shavings and then age slowly improving their bouquet over decades. It has a very intense aroma, while still preserving some citrus aromas. Rich in typical aromas of aging, such as walnuts, dried figs, toasted and cocoa. In the flavor is bulky but delicate, with the sweetness well balanced by the acidity, fresh and elegant. Contains sulfites.
