Malvasia Fina, Encruzado, Bical
Made with grapes harvested in the old vineyards on the property of Ribeiro Santo and another portion, in São João de Lourosa, where Dão runs the denomination of the origin of this blend, made from the Encruzado variety. We used wine lees from 2015 to produce this White - the fermentation of the must occurred under these same lees, including the own lees, from 2016. Fermented later in 300L barrels and there it staged, with battonage, for 6 months. After bottling, we kept the wine in the basement for another 6 months.
