Alvarinho single variety sparkling wine, citrus yellow in color, with fine bubbles and a persistent cord. It presents a good balance between acidity and alcohol, where the fruity aroma of the Alvarinho variety persists. It should be served between 8ºC and 10ºC, being ideal with roasts, red meat, suckling pig, cheeses and oysters. This superior quality sparkling wine is the result of grapes of the Alvarinho variety harvested in a small plot, which is located at an altitude between 300 and 350 meters in altitude, aged close to 20 years, protected from the north winds and in granite soils, allowing the development of small berries, with a thick skin and a slow maturation, in order to preserve all the aromatic complexity of the grape. The harvest of these grapes occurs earlier so that the total acidity is higher and its probable level is not higher than 11.7%, resulting in a fresh, light sparkling wine with a fine and persistent bubble.
