Blanc de Noir
Very light pink tonality, ripe and full aroma, with notes of red fruits, but with subtlety and elegance. Very good proportion in the mouth, fine mousse, weighted acidity in a very well tuned set. Crushing with total destemming, soft pneumatic pressing, where even the must used flôr. The clarification was natural and the alcoholic fermentation occurred at 18ºC. Sparkling by the classical method.
