The alcoholic fermentation took place in open dornas with the traditional step on foot. It started naturally, with the yeast of the own vineyard in a way to express purely its identity. The fermentation temperature was regulated with ice packs and the cold of the mountain nights. Little extraction was attempted. After pressing, the wine passed directly into used barrels of French oak, where it performed the malolactic fermentation until the following spring and staged for 16 months. The raids were carried out by gravity and pitchers. Contains Sulfites.
